One pan meatballs and spaghetti

I just made this for dinner - it was quick and delicious! It’s based on a Cook’s Country recipe.

1lb ground beef

1/3c. bread crumbs

1 egg

6 garlic cloves, minced

1tbsp. olive oil

1 (28oz can) crushed tomatoes

2c. water

8oz spaghetti, broken in half

Spices to taste (I used Italian seasoning, salt, pepper, and red pepper flakes)

Combine meat, bread crumbs, egg, and 3 of the garlic cloves in a bowl and knead until gently combined. Form mixture into as many 1-inch meatballs as you can make. Heat oil in a 12-inch non-stick skillet over medium-high heat until just smoking. Cook meatballs until browned all over, about 5-7 minutes. Transfer meatballs to a plate.

Add remaining garlic to skillet and cook until fragrant, about 30 seconds. Add tomatoes, water, and pasta and bring to a boil. Cover, reduce heat to medium-low, and cook, stirring often, until pasta begins to soften, about 7 minutes. The sauce will look watery but don’t worry. Return meatballs to pan and simmer, covered, until meatballs are cooked through and pasta is al dente, about 10 minutes longer. Add spices and stir.  Serve! Eat!

I made garlic bread too and it was great - add in a small tossed salad and it’s a good meal for 2-3 people. I’m going to have a tasty lunch tomorrow too.
